BANANA WALNUT SCONES & CARAMEL DATE SAUCE (VEGAN)

Yield: 8 scones 

Time: 45 minutes 

 SCONE INGREDIENTS 

  • 2 ¼ cups whole wheat pastry flour

  • 1 tbsp baking powder

  • 2 tsp cinnamon 

  • ¼ tsp salt 

  • 3 ripe medium bananas 

  • ¼ cup plant milk

  • 1 flax “egg” (1bsp flax meal + 2.5 tbsp water)

  •  1/3 cup coconut sugar (or sub brown sugar)

  • 1 tsp vanilla extract 

  • ¼ cup crushed walnuts, optional 

CARAMEL DATE SAUCE INGREDIENTS 

  • 1 cup pitted medjool dates

  • ½ cup full fat coconut milk 

  • ¼ cup maple syrup 

  • 1 tsp vanilla extract 

INSTRUCTIONS

  1. Preheat oven to 425 degrees F. Begin by combining flax meal and water in a small bowl. Let sit for 5-10 minutes. 

  2.  In a bowl, whisk whole wheat pastry flour, baking powder, cinnamon and salt. In a separate bowl, mash bananas and then incorporate plant milk, coconut sugar, vanilla extract, and flax “egg”. 

  3. Combine the dry and wet ingredients. Mix with a wooden spoon to form a dough ball. If the dough is sticky, add extra flour by the tablespoon until you can handle the dough cleanly. 

  4. To roll out the dough place a piece of parchment paper on a flat surface. Then place your dough ball on top of the parchment. Cover the dough with another piece of parchment. Take a rolling pin or glass to flatten the dough. Create a circle that is about 1 inch thick. Peel away the top piece of parchment, and then use a knife to cut the dough into 8 triangles. 

  5. Transfer the scones to a baking sheet lined with parchment. Place in oven for about 15 minutes, until the bottoms of scones are golden brown.  

  6. Meanwhile, make the caramel date sauce. If your dates are hard it might be useful to first soak in them in boiling water. Combine all ingredients listed into a high-speed blender or Cuisinart.

  7. When the scones are done, cover with caramel date sauce and crushed walnuts.
