My name is Amber. I have a B.S. in dietetics and I am pursuing to be a registered dietitian nutritionist (RDN). I created this space to share plant-based, vegan recipes and nutrition information.
Behind the Friendzie
A tradition I treasure is creating and sharing meals with friends and family. No matter individual tastes adored or foods preferred, it’s a special moment sitting down to a meal created together. If you’re vegan and have non-vegan friends like me, you know the first bite they take of a vegan meal is kinda important. You want them to love it, but also don’t want to exude to much eagerness for their response. I’ve learned to look for the silent approval— smiles and clean plates across the table. That being said, the most heart warming compliment is a recipe request.
Just for fun, here’s 10 things about me:
I grew up surrounded by woods, our driveway is almost a half mile long.
I love eating soup for breakfast.
Running is my favorite form of exercise and way to attain metal clarity.
My first concert was Zooey Deschanel's band, She and Him.
Growing up we had three birds. They were named Greeny, Bluey, and Tweety Bird.
My next step to become an RDN is a dietetic internship. My dream internship is in Washington state.
Career-wise I’m interested in clinical nutrition research, as well as preventative medicine through nutrition and other modifiable lifestyle factors.
I was once obsessed with cheese and put it on everything (I don’t miss it!).
I have two older brothers who both live in California.
For as long as I can remember I’ve dreamed of having a food blog.
