APRICOT FIG BARS (VEGAN/GF)

Yield: About 16 squares 

Time: 40 Minutes 

 INGREDIENTS 

 For the Dough: 

  • 2 cups oat flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • ¼ tsp salt

  • 7 pitted medjool dates 

  • ½ cup unsweetened apple sauce

  • 4 tsp orange juice 

  • 2 tbsp pure maple syrup 

 For the Filling: 

  • 1 ½ cups dried figs

  • ¾ cup dried apricots

  •  2 tbsp coconut sugar or pure maple syrup 

  • ¼ cup + 1 tbsp water

  • 1 tsp orange juice 

INSTRUCTIONS 

  1. Preheat oven to 350 degrees F and line an 8 x 8-inch pan with parchment paper. 

  2. Make oat flour by blending 2 cups of oats. Then whisk the flour, baking powder, baking soda, cinnamon, and salt. In a Cuisinart or high-speed blender, blend the dates, apple sauce, orange juice and maple syrup. Combine with the flour mixture to form a dough.

  3. Cut dough into 2 halves and then roll both to fit the 8 x 8-inch pan. It might be easier to roll between 2 sheets of parchment paper. Place one half to cover the bottom of pan. 

  4. Next, make the filling. Combine all ingredients in a blender or Cuisinart. Blend until smooth and no chunks remain. Scoop the filling to spread evenly across the bottom dough layer. Next, place the second half of dough on top of the filling. Seal the edges with your fingers. 

  5. Place in oven for about 20-25 minutes. Let cool completely before cutting and enjoying!
